Chocolate chip cookies



It’s fika time, folks! Introduced by my former Swedish colleagues, I caught on to this lovely tradition pretty fast. Fika is both a Swedish verb and noun (pronounced “fee-ka”) that roughly means “to drink coffee/tea” usually accompanied by something sweet (source- wikipedia). It’s customary to invite friends and colleagues for coffee along with deliciously baked goods. Now, I can’t drink a cup of coffee without anything sweet. so, I baked these lovely cookies to accompany my coffee and satisfy my sweet craving. This chocolate chip cookie recipe is pretty simple and can be baked in batches and stored for about week. I found this recipe from a book titled “baking with passion” by Dan Lepard and Richard Whittington. Here I am, enjoying some freshly baked cookies with a hot cup of coffee – Loving it!

A simple chocolate chip cookie recipe to enjoy your cup of coffee!
Ingredients
  • 200 grams all purpose flour
  • 85 grams caster sugar
  • 1 egg
  • 80 grams unsalted soft butter
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • pinch of salt
  • 100 grams dark chocolate- cut in small chunks or chocolate chips
Instructions
  1. Preheat oven to 180 degree celsius.
  2. In a bowl sift together the flour, baking soda, baking powder and salt.
  3. In another mixing bowl cream the butter with the sugar until light and fluffy.
  4. Beat in the egg to this mixture.
  5. Fold in the flour followed by chocolate pieces using a spatula- the dough will be stiff.
  6. With the help of your hands roll walnut-sized pieces of dough and place them on buttered baking trays.
  7. Leave space in between the cookies to allow room for spreading.
  8. Bake for 20 minutes or until the edges are firm but the center is soft.
  9. Remove and allow it to cool.
  10. Enjoy with a steaming hot cup of coffee!
Notes
Yields about 15 cookies!

Cardamom buns!

If I had to chose a flavor, I might be very confused between cinnamon and cardamom! I loveeeeeeeee both and can't get enough of them :) - Both are versatile and can be used in sweet bakery items and can simply enhance an Indian gravy. I love cinnamon in my coffee and always drink my milk with cardamom pods in them. This time, instead of using the usual cinnamon, I tried my hand with cardamom and boy, the buns were awesome. Before I start off again with my ramblings on cardamom and cinnamon, here is my recipe for cardamom buns! Enjoy-



Ingredients-

500 gms all purpose flour
50 gms sugar
pinch of salt
30 gms butter (melted)
12 gms dry yeast
2 tsp cardamom powder
1 egg yolk
250 ml warm milk
1/2 cup raisins

Preparation- 

Activate the yeast by mixing it in a small cup of warm water and a tsp of sugar. Set it aside for five minutes. In a separate bowl, mix flour with salt, sugar, raisins and cardamom powder. Start mixing the flour with the help of yeast mixture. Slowly, blend in the egg yolk, melted butter and warm milk. Knead the flour with your hands for five minutes till it gets a good texture. Place the dough in a separate bowl and cover it with a damp tea towel. Allow the dough to raise for an hour.



Once the dough has risen, knead it for a couple of minutes on a lightly floured surface. Divide the dough into medium sized balls. Take one dough ball and roll it into a strip. Tie the strip into a knot. Work in a similar fashion on the rest of the dough. Line a greaseproof paper on a baking tray and place your buns on the tray. Cover the tray with a damp cloth and allow the buns to raise a bit for 10-15 minutes. Coat each bun with a bit of butter and pop them in a preheated oven for baking (@ 200 degree celsius). Bake the buns till golden brown. Enjoy!!!

Apple & Cinnamon rolls

My baking story begins in a super market- I spot a big sale on apples and buy them without thinking. The burden of impulsive purchase lies heavily on my heart and I try to eat my apples everyday. So, here I am, eating apples in the morning, noon and night- Now, I am sick and tired of eating them. After a week of indulging in apples, I don't even want to look at them. Luckily, there are only three apples left and I don't feel like eating them anymore. They are sitting on my table in a bowl and glaring at me...Finally, I am thinking of using them in a pie? cake? - Guess what happened to my apples??

Viola, Apple Cinnamon rolls-


Ingredients- (for the base)


2 cups flour
3/4 tsp salt
1/2 cup raisin
1/2 cup milk (warm)
1/4 cup warm honey
1/4 cup melted butter
1 egg
2 1/2 tsp yeast

Ingredients- (for the filling)

1 cup chopped apples (chopped to tiny bits)
2 tsp cinnamon
1/4 cup melted butter
1 cup brown sugar
1/2 cup chopped nuts (I used almonds- can use walnuts/pecan nuts)
1/2 tsp cardamom 

Preparation- dough

In a bowl, dissolve yeast in milk, honey and melted butter. Set it aside for five minutes. In another bowl, mix salt and raisins with flour. Pour in the yeast liquid with egg. Slowly, start kneading the flour- Dump the contents on a lightly floured surface and patiently work on the flour for 10 to 15 minutes. Once kneaded, the flour should be smooth and silky. Place it in a greased bowl and cover it with a damp tea towel. Allow the dough to raise for an hour.

Preparation- filling

In a bowl, mix apples with cinnamon, cardamom, butter, sugar and nuts. Blend well and keep it aside.

Final preparation- 

Once the dough has doubled in size, punch out the air and knead it gently on a lightly floured surface. With a rolling pin, start rolling out the dough into a flat square. Brush melted butter on the dough. Dump the apple filling in middle and spread it gently on the dough (all around the flat square). Start rolling the dough along the long edge till it is completely rolled up into a big log. You have to do it gently and ensure that the apple filling does not fall out. Slice the dough into equal sized pieces and place it on a baking tray. Cover it with a damp cloth and allow it to raise for 15-20 minutes. Give it a quick egg wash (egg beaten with milk or water). Bake them in a preheated oven @ 175 degree celsius till golden brown. Enjoy!

The perfect coffee companion - Apple n Carrot muffins :)

Carrot and raisin muffins with a steaming cup of coffee tastes heavenly. I still have the taste lingering in my mouth... I am not an avid baker and seldom indulge in baking. Occasionally, I get super inspired to bake and in the heat of the moment, I do some good work ;) Here is one such recipe- it's got em' all- carrot, apple, raisin & nuts (super moist) muffins-



What do we need?

2 cups all purpose flour
3/4 cup brown sugar
1/2 cup yogurt
1/3 cup melted butter
1 medium apple peeled and chopped finely
1/2 cup raisins
1/4 cup chopped cashew nuts
1 1/2 cup shredded carrots
1 tsp vanilla extract
1 tsp cinnamon
dash of cardamom powder
1/2 tsp baking soda
2 tsp baking powder
1 tsp salt
3 eggs



How did I do it?


In a large bowl, mix the flour, salt, baking powder, baking soda and cinnamon. In a separate bowl, beat the eggs together with sugar and slowly mix in the yogurt, apple, carrot, raisins, melted butter, vanilla and nuts. Add the flour to this mixture and blend in the cardamom powder. Stir till it has blended well. Using a spoon, fill in the greased muffin cups with the batter. Bake for around 25-30 minutes in a pre-heated oven @ 175 degree celsius. Once cooled, they taste divine with a steaming cup of coffee. Yum!
(Dust the muffins with powdered sugar-optional)

blueberry muffins..

Near my house, there is a small bakery shop around the corner. It is a family owned shop and they do some serious business. I love all their bakery items! There is always a mad rush and if you are late then you probably won't find your favorite items. I am super addicted to their blueberry muffins- Soft, moist and it simply melts in your mouth. Inspired by lindsey and her lovely blog, I baked my very fist batch of Blueberry muffins- Absolutely divine!



Blueberry muffins-
(adapted from Gingerbread Bagels)

Ingredients-
2 cups all purpose flour
1 1/4 cup sugar
1 tsp vanilla extract
1/2 cup unsalted butter (slight variation, she had baked it with oil and I switched to butter)
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
1 cup blueberries
1 tablespoon lemon zest (slight variation, original recipe calls for orange zest and I switched to lemon)
2 large eggs
1 cup yoghurt

Preparation-

In a bowl mix flour, salt, baking soda and cinnamon. Set aside. In a separate bowl, whisk together eggs, yoghurt, sugar, vanilla and melted butter. Add in the lemon zest and give it a quick whisk. Start mixing the flour to the yoghurt mixture and gently whisk. You have to slowly mix them and not overbeat the ingredients. Don't worry if you have lumps in the batter. Add the blueberries and gently blend them with the mixture (with the help of a spoon). Line a muffin tin with muffin liners. With the help of a spoon gently pour the batter in each liner. Bake it at 200 degree celsius for 20 to 25 minutes. Once baked allow it to cool and gently remove them from the muffin tray. Enjoy!

Chocolate covered Shortbread cookies

There is something special in air during Christmas- You can feel it...People buying gifts, houses decorated, cakes, cookies, beautifully decorated christmas trees and the list goes on. You cannot help but get into the holiday spirit and spread some cheer around! Here I am with my Chocolate covered shortbread cookies to please Santa- Hope he enjoys...














Ingredients-

2 cups all purpose flour
1/4 tsp salt
1 cup unsalted butter
1/2 cup sugar (icing)
1 tsp pure vanilla extract
180 grams semi sweet chocolate finely chopped

Preparation-

In a bowl mix the salt with the flour thoroughly and set aside. With a hand blender beat the butter till it is smooth and creamy. Blend in the sugar and mix it till it is smooth. Add the vanilla extract. Now blend in the flour and roll it to a smooth dough. Keep the dough in fridge for an hour. After an hour take out the dough and roll it into a thick circle on a lightly floured surface. Using cookie cutter cut the dough into different shapes. Bake for 8-10 minutes in a preheated oven (180 degrees Celsius). Once the cookies are lightly browned take them out and cool them.

For chocolate covering- Melt the chocolate till it is smooth and glossy (put the chocolate in a bowl and place it over a saucepan of simmering water). Once the cookies are cooled, dip one end of each cookie in the melted chocolate and place it on a tray covered with baking sheet. Place the tray in the fridge for 10 minutes till the chocolate has hardened.

I'm back!

Hoooray! I am back to the blogging world after a long break. And I have a treat for the senses! I whipped up a one layer chocolate cake with cocoa and it turned out perfectly divine. I tried out this recipe from a website that I frequently visit- www.cacaoweb.net. 


If you are a beginner like me in the baking world then this recipe is perfect-


Ingredients-


1¼ cup (140 g) all-purpose flour
1½cup (330 g) sugar
4 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon vanilla extract
¾ cup (170 g) butter
boiling water
3 eggs
150 g chopped walnuts 


Ingredients for frosting


170 g butter

1 teaspoon instant coffee powder dissolved in 2 tablespoons hot water
340 g icing sugar
1½ tablespoon unsweetened 
cocoa powder
1 teaspoon vanilla extract



Preparation- 


Preheat oven to 180 deg C. Take a cake tin and line it with non stick paper and grease the tin. Melt the butter in a saucepan. In a bowl combine flour, sugar, cocoa powder, baking powder and vanilla extract.
Add eggs, melted butter and hot water and mix until smooth. Add chopped nuts.

Bake at 180 degrees for 20-30 minutes or until a wooden pick inserted in center comes out clean. Cool the cake. Glace with the frosting.

Frosting-


For the frosting, melt the butter in a sauce pan and remove from the heat. Add coffee, mix with icing sugar, cocoa powder and vanilla. Stir until smooth and spread over the cake. Enjoy!

House smells of cinnamon- Cinnamon rolls

One ingredient that is versatile is cinnamon. I love cinnamon flavor in almost everything- You can add in gravies, rice recipes and of course my favorite cinnamon rolls- ah, I could kill for a cup of steaming coffee and cinnamon roll. Here's my batch of home made cinnamon rolls- Enjoy!















Ingredients-

1 pkt active dry yeast (7 gm)
3/4 cup warm milk
1/4 cup white sugar
3/4 tsp salt
1 egg
2 1/2 cups all purpose flour

For the filling-

1/4 cup softened butter
1 big tablespoon cinnamon
1/2 cup brown sugar

Preparation-

In a large mixing bowl, combine yeast, milk, sugar, salt, egg and one cup of flour. Stir the ingredients well. Add the remaining flour and knead it to a smooth dough. Store it in a bowl and cover it with a damp cloth. Allow the dough to raise and double in size (should take an hour).

For the filling, combine butter, cinnamon and brown sugar to a good paste. Once the dough has risen, roll it on a lightly floured surface to 1/4 inch thick rectangle. Smear some butter on the flattened dough. Spread the filling on the dough. Roll it up along the long edge till it forms a one big roll. Slice the roll into equal sized pieces and place it on a baking tray. Cover it with a damp cloth and allow it to raise for 10-15 minutes. Give it a quick egg wash (egg combined with milk). Pre heat the oven to 200 degree Celsius and bake the rolls for 15 to 20 minutes till golden brown. Give enough space for the rolls to rise when baking it in the oven. Once baked, serve it hot with steaming cup of coffee!

Peanut butter and chocolate chip cupcake

Isn't that a pretty sight? Wow, I am so proud of myself for baking cup cakes. You might wonder, what is the big deal? The big deal is, I have never baked a cup cake before! Gotta be honest with you guys- I am intimidated by baking. For some reason, I was convinced that I could not bake and I always stayed away from it. Finally I decided, what can go wrong? (except the fact that a bunch of cup cakes will have to be thrown in the bin). I won't call this a master piece. This is just a stepping stone and I can't wait to try some more baking. Like a child who is given a toy to play, here I am listing my joy in baking these cup cakes- Hope you enjoy! I got this recipe from one of my friend who is super smart in baking and dedicate this blog post to my friend-





                           

Ingredients-

2 and 1/4 cup all purpose flour
1 and 1/2 cup sugar
3 eggs
1/2 cup choco chips (semi sweet)
1 teaspoon vanilla
1 and 1/4 cups full cream milk
1/2 teaspoon salt
3 tablespoon cocoa powder
3 and 1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/2 cup creamy peanut butter

Preparation-

I started by preheating my oven to 350 degrees. Arranged the cup cake tray with paper liners. In a big mixing bowl, combined all the above listed ingredients. Kept mixing till it became a super smooth batter (for around 4 minutes). With the help of a spoon filled the cups (1/2  to 2/3 full). Baked them for around 25 to 30 minutes. You could decorate it with any frosting of your choice. Will start improvising from my next baking- Till then, I am enjoying these cupcakes!
